Report details restaurant performance statistics

Hundreds of restaurant operators in Toronto and the country at-large have participated in a survey that will help industry observers determine how well restaurateurs are performing in Canada.

Teaming with Kostuch Media and the Ryerson University School of Hospitality Management, food service consultancy firm FHG International conducted the survey, which includes 600 restaurateurs representing 3,000 restaurants.

"Industry operators are hungry for operating data in which they can analyze operations in order to enable them to operate more effectively in a tough economic market," said Doug Fisher, president of FHG. "It is just this type of data, which provides details on operations by segment, by province, by number of seats, by square footage, by province, and by municipal location is just what operators need to measure their performance."

The results of the survey have been published in Foodservice and Hospitality magazine.
